What are food sensitivities?
Food sensitivities are immune-mediated reactions to foods that involve IgA, IgM, or IgG antibodies. These food reactions usually cause a wider variety of reactions such as IBS symptoms such as gas, bloating, diarrhea, or constipation, headaches, brain fog, rashes, joint pain, acne, congestion, etc. These reactions can pop up hours to days after ingestion and are what we call delayed hypersensitivities. Since the reaction is not immediate, it’s more difficult to determine which foods are causing the reactions. This is why it is so important to test for these reactions in order to determine what foods are causing underlying inflammation your body.
Food Sensitivity vs. Food Allergy vs. Food Intolerance
Food allergies are IgE-mediated. This type of immune reaction often causes immediate, severe, anaphylactic reactions. Hives, trouble breathing, swelling, and wheezing are common symptoms that typically occur within minutes of ingesting a particular food.
Food intolerances are typically caused by a lack of a particular enzyme. For example, people who lactose intolerant lack the lactase enzyme needed to break down lactose, the sugar found in dairy.

Why is testing for food sensitivities helpful?
Food sensitivity testing can give us great insight into your intestinal permeability, how easily material can pass through the gut wall into the rest of the body.
If your gut lining is letting peptides from foods pass through into circulation where they don’t belong, the immune system recognizes those food peptides as “foreign” and mounts an immune attack, creating antibodies in the process. These antibodies are what we are testing for when we do food sensitivity testing.
Increased intestinal permeability can wreak havoc on the body and has even been shown as an underlying cause of autoimmune diseases such as IBD, celiac disease, multiple sclerosis, rheumatoid arthritis, and systemic lupus erythematous.
In patients that are reacting to many foods, without removing these foods they will continue to attack the gut lining and trigger the immune system. In some cases, this makes it harder to reap the benefits of a treatment protocol due to continuous chronic inflammation.
